Welcome to Peniche, Portugal. We love to bake sourdough bread, travel and wander about. In this episode of the Surf Bubbles, we visit a world famous surf destination on Portugal’s central coast. Our trail selection was just north of neighboring Baleal. As you can see, the ocean views from the cliffs here were absolutely stunning. We hope that you enjoy this glimpse into such a beautiful surf paradise. There is so much to cover here, and this posting barely scratches the surface. There will most likely be a second release for this region at some point in the future.

BAKING NOTES:


Ingredients:

  • 500gm all purpose flour

  • 255 gm water

  • 9gm salt

  • 100gm sourdough starter*

  • 28gm melted unsalted butter

  • 20gm honey

  • Course sea salt for topping

  • 1 whisked egg for egg wash

  • 6 cups water, 2 tablespoons baking soda and 1 tablespoon honey for boiling of pretzels


*Sourdough starter fed at 1:1:1 using strong/bread flour


Instructions:

  • Mix all ingredients (except sea salt, egg wash and ingredients for boiling pretzels)

  • Knead X 10 minutes

  • Rest for 90 minutes

  • Stretch and fold X 1, then form into ball and place in container with lid for bulk fermentation

  • Let dough rise at room temperature for 8-12 hours or until double in size

  • Place in refrigerator covered overnight

  • Next morning: divide cold dough into 10 pretzels weighing ~90gm per pretzel then shape each pretzel

  • Place formed pretzels on pan lined with parchment paper

  • Cover pretzels and let rest at room temperature for 1.5-2hrs

  • Boil 6 cups of water with 2 tablespoons baking soda and 1 tablespoon of honey in a large pot

  • Boil 3-4 pretzels at a time for 30-45 seconds per side

  • While pretzels are boiling, preheat oven to 218 degrees C (425 degrees F)

  • After pretzels have all been boiled, brush egg wash over top of pretzels and sprinkle with sea salt

  • Bake for 12-15 minutes or until golden brown

  • Let rest for 30 minutes on baking rack before eating
